Add 4g of gelatin to 20ml of water and leave it for 10 minutes. Make 70g of cream cheese to cream and mix with 20g of sugar powder. Add 40g of plain yogurt and 30g of apple jam and mix. Add 50% whipped sweetened whipped cream and mix. Melt the gelatin by microwaving it for 10 seconds. Spread vegetable oil in the mold. Fill the dough about 3/4 and place genoise on top of it. Cool it down in the fridge for 2 hours. Add 4g of gelatin in 20ml of water and leave it for 10 minutes. Mix 40g of sugar, 40ml of water, and 30g of starch syrup and heat it over medium heat. When the sugar melts, turn off the heat and add 30ml of whipped cream. Melt 60g of chocolate and mix with them. Add the gelatin. Use the food coloring to give color to the mixture. Separate the mousse cake from the mold. When the glaze is a little thick, coat it. When it goes down to the bottom of the pan, heat in a double boiler and coat it again. If you don’t want to repeat the heating, you can make another portion of glaze. Leave it in the fridge for 2 hours. Draw the shapes with the chocolate. When it’s too thin, it will break. Make gradation by using gold food coloring. Snow White theme dessert is done! I was running out of time so I didn’t have enough time to dry them; the glaze is a bit sticky 🙁 It’s okay if you cool it down completely~ I used white chocolate glaze for coating so it’s a bit sweet~ I can taste the apple jam! The apple doesn’t taste strong~
