Apple coconut barfi This is a delicious treat. This fudge-like barfi is super easy to make. It is also vegan and gluten-free. The fruity taste makes for a great sweet snack without the guilt. This recipe will make 12 pieces and will serve 6. To make apple coconut barfi, we will need: 3 cup apple (peeled and shredded) I have used 3 apples. 1 cup freshly grated coconut I am using frozen shredded coconut. And this is available in Indian grocery stores. 1.5 cups of sugar 1/2 cup crushed walnuts 1/4 teaspoon of crushed cardamom 1 tablespoon sliced pistachios And this I will use this for garnishing. Apple coconut barfi is really super easy to make. So first I will add the apples. I am using a non-stick frying pan. Coconut Sugar Mix it together. And open the heat to medium. Just keep stirring occasionally till all the sugar is melted. We have to cook this apple mixture till it becomes a soft dough. Mix has come to boil. And now it should take about 15 minutes before it is cooked. Apple layers are soft and mix should be a texture of soft dough. Stir occasionally. This has been about 7 minutes. And as you see most of the moisture has evaporated. So this is the time to add the walnuts. And cardamom powder. Mix it well. For me, cardamom is a very essential ingredient for any dessert I make because I like the flavor and the smell. Now as you see, the mixture started coming together and thick. Now we need to stir continuously. Keep cleaning the sides. Apple coconut barfi is wholesome goodness of apple, walnuts, and coconut. And as you see it is ready. It is like a soft dough. So turn off the heat. I am using 5*7 pyrex dish. And I have already greased. So I will transfer the mixture into it. Just press it. Press this firmly and leave it till it cools off to room temperature before we will cut them into burfi. But before that, I am going to garnish this with pistachios. Press it and wait till it cools off before we will cut them into slices. Apple coconut burfi is healthy and delicious. My grandkids cannot wait for me to cut them into barfis.
