Welcome to Souped Up Recipes today we are making hong shao qiezi it is a very popular Chinese eggplant dish
all over China. It is a nice vegetarian recipe If you like eggplant, then this is a great
recipe you must try If you hate eggplant, I think you should still
try It’s really delicious and you might like
it You need a long eggplant. Cut it into strips. Round eggplant is not a good substitution because they are kind of watery Not good to fry You can remove the skin if you want But i wouldn’t recommend that because the skin is where the vitamin is concentrated I don’t want to waste that. Eggplant is a very tricky vegetable to cook If you don’t season it properly, it will
taste extremely plain That is why we are going to season the eggplant
with some salt I used about 1/2 tsp Toss it so the salt is evenly seasoned 20 minutes later, you will see that eggplant starts getting wet and changing color That means it is ready to fry Also, you need some chilies, Cut it into small
chunks 2 tbsp of minced garlic 1 tbsp is for stir fry and the other tbsp
is for the sauce. 1 tbsp of minced ginger And have some diced scallion and cilantro
for garnish. The sauce is what makes the eggplant taste savory 1 tbsp of minced garlic 2 tsp of light soy sauce for the saltiness 1 tsp of dark soy sauce for the color 1 tsp of sugar 1 tsp of black vinegar 1/2 tsp of cornstarch so the sauce can be
a little thick 3 tbsp of water Mix them well Add enough vegetable oil into the wok Use medium heat Don’t through in the eggplant when the oil
is cold Wait until the oil is hot You can test the temperature with 1 piece
of eggplant If you see a lot of bubbles. That is perfect. Add in the rest of the eggplant. Be careful, don’t burn you self. Just needs few minutes until it turns soft. Take it out and set it aside. Leave 1 tbsp of oil in the wok we need that to stir fry the ginger, garlic
and the chilies stir fry for 3 minutes or until fragrant Pour in the sauce we made before Stir fry for 1 minutes and you will see the sauce is getting a little
thick. Add in the eggplant Give them a nice mix. Don’t cook it too long here, because we already fried the eggplant. Once you see the sauce is almost gone turn off the heat Garnish it with some spring onion and coriander. You are done. The eggplant is coated in a savory sauce which is a great combination of flavors garlic, soy sauce and a touch of vinegar to
balance it out. It is simple and delicious what a great side dish to compliment a big
