Namaskar. Welcome to nishamadhulika.com. Today we will make Yummu Sabudana Kheer. It is really delicious. You can make it during fast or even when you crave for something sweet. Let’s start making Sabudana Kheer. For it firstly boil 1 litre Full cream milk. Meanwhile till milk boils, cut the dry fruits. Cut 10 to 12 almonds, chop them. Also chop 10 to 12 cashews. Also cut the pistachios. Coarsely crush 5 to 6 green cardamoms. Milk is boiling. Take 15 to 20 saffron strands, add some milk to it to give off color. Take 1/2 cup sago pearls sokaed in water for 1 hour. Remove extra water. Put sago pearl in milk. Stir and cook kheer on high flame. Sometimes the milk splutters on adding sago pearls. So stir the kheer till there is a boil in it. Milk has simmered well. Now you can stop stirring the kheer. Now add raisins, they will turn puffy. Add some dry fruits too such as almonds and cashews. Add Saffron milk too. Stir at intervals and cook the kheer on medium flame till dense. Kheer is dense and sago pearls are transparent. Add sugar. You can adjust its quantity as desired. Add cardamom powder, mix and cook for 1 to 2 minutes. Sugar has dissolved the Kheer looks tempting. Kheer is ready, turn off flame. Let it cool for a while. Kheer has cooled take it out in a serving bowl. Garnish the Kheer with some dry fruits. Kesariya Sabudana Kheer is ready to be relished. It is really delicious. Just be careful, that whern you add sago pearls to milk, then your stir it well, stir well at every 1 to 2 minutes. Stir till the very bottom of the kheer in vessel. Kheer shouldn’t stick at base of vessel. It the Kheer sticks, its taste will get spoiled.
