Welcome to 5-Minute Kitchen with Shraddha Today we are going to make Keto Rasmalai Rasmalai is very Popular Indian Dessert I have given this a low carb Keto twist So you can have this in your Ketogenic Diet Let’s start Making Keto Rasmalai is 3 step process Firstly we will prepare chena for Keto Rasmalai Bring 1-litre whole milk to boil Then add 2 tbsp Lime Juice Turn off the gas flame Keep Stirring Immediately you can see that milk begins to curdle Drain the whey Pour it into the cheesecloth-lined colander Gently rinse with cold water to get rid of the lemon flavor Make a knot to the cheesecloth and gently squeeze any excess water Let it sit for 30 minutes to get rid of extra water Open the knot Transfer the chena to a plate knead well for about 10 minutes until it gets soft and smooth Making these discs(chena) is very important part in making Keto Rasmalai Hence, knead this with patience (#tip) otherwise there are chances that these paneer discs may break while cooking Now dough is ready we will make equal small size chena discs These chena discs will become double in size after cooking in syrup hence you can give it a shape of your choice We will prepare syrup to cook Keto chena discs Add 1-litre water to pan Add 1/4 cup Stevia as we are making low carb dessert Let it boil Add chena discs once boiled Let it cook for 20 minutes on high flame Cover it with lid Keep stirring in between After around 20 minutes Chena discs will start floating on the top of syrup and you will find the balls will be double in size it means discs are cooked and are ready now Now gently squeeze the discs to remove access syrup Set these aside In step 3, we will prepare Keto Rabri for keto rasmalai Take 750ml Unsweetened Almond milk in a pan Let it boil on medium flame Add 1/4 cup Stevia 2 tsp Cardamom powder and mix well Cardamom powder is very important ingredient of Rasmalai and many other Indian sweet dishes Also enhances smell and taste of our Keto recipe I have soaked 10-12 Saffron thread in 2 tbsp Almond milk around 20 minutes ago.
