Today I will be making kheer. It’s closer to rice pudding. It’s a very popular dessert and very easy to make. So the recipe I am giving you it’s for serving for 4. I am going to use 1/4 cup of short grain rice. 1/4 cup of sugar 1.5 tablespoons of sliced pistachios 1.5 tablespoons of sliced almonds Pinch of cardamom powder. Pinch of saffron. About 1/2 teaspoon of butter I am going to wash my rice. So I already have washed these rice and ready to use. I have my pot on, medium high heat. And I am going to add the butter. And just let it get saute. And I am going to add now my rice. I like to use the short grain rice and it’s little bit more starchy. So for kheer starchy rice is better. And stir fry this just for about 2 minutes. It has been about 2 minutes. And my rice is ready and I am going to add the 4 cups of whole milk. And after this comes to the boil we will reduce the heat to medium. And it will take about half an hour before this will be ready. Just make sure occasionally you keep stirring the milk otherwise milk can sit in the bottom and get burnt. Milk is boiling, I am going to turn my heat to medium. And it will take about half more hour before kheer will be ready. I like to use the nonstick heavy pan. It helps milk doesn’t get stick in the bottom and burn. You have to keep stirring occasionally. And that also helps so milk will not burn. And it should take half more hour. My kheer looks ready. Milk should reduce to about half and rice should be very soft and tender. But not mushy that you cannot feel the grains of the rice. It’s time to add the sugar. It’s 1/4 cup of sugar. Mix it well. I just added cardamom powder. Now I am going to use the saffron. And I put the saffron strings, I like it if you can see it little bit here and there. And almonds. And pistachios, I am going to save some pistachios to garnish from the top. And just let it simmer just for another 2-3 minutes. Just remember, kheer after it cools off it will get little more thicker than what you see here. And when you are boiling it, till milk boils it does sit in the bottom more. So you have to stir more occasionally than you stir after it boils. My kheer is done. It’s looking and smelling very good. If you want to serve kheer cold then you should add one more tablespoon of sugar. And I am going to garnish this from remaining pistachios. This is a very easy dish to prepare.
