Today I will be making milk cake. It’s very delicious and mouth-watering dessert. Milk cake is very unique made with very few ingredients. Primarily milk and sugar. And has a touch of sourness. This recipe will make 12 pieces. For this recipe we need: 6 cups of whole milk Approximately 3 tablespoons of lemon juice 1/2 cup of sugar 1/8 teaspoon of crushed cardamom seeds 2 tablespoons of unsalted butter or ghee For garnishing 1 tablespoon of sliced pistachios. For this recipe, I like to use wide and heavy sauce pan. So fast I am going to boil the milk over medium high heat. So first we need to bring the milk to boil. And do stir occasionally otherwise milk can burn in the bottom. After milk comes to boil, it has to boil for 2-3 minutes. And then we are going to add the lemon juice. And it will start curdling the milk. Milk has been boiling for about 2 minutes. And I am going to start adding the lemon juice. And like I said you have to use just minimum amount of lemon juice, so milk just start to curdle. So little bit more. And as you see milk has started separating. So now we don’t need to add any more lemon juice. As you see milk has started curdling and slowly it will start separating and you can see the whey. We have to cook this down with the whey and which will take about 15-20 minutes. So this has been about 5 minutes, after the milk has started curdling. And as your see now whey water has really separated. I am going to take out about 1.5 cups of whey water. So that will reduce the sourness from the milk cake and will help cooking it faster. So this is about 1.5 cups of water. And we are going to put the milk back. And cook again for another 15 minutes. And now we have to keep mixing also occasionally to break the big chunks of curd. Since we have taken out the whey water, it has been 14 minutes. So add the sugar. And mix it well. And cook for another about 2 minutes. As you see mixture has started coming together. It has been 3 minutes after I have added the sugar. So this is the time to add the cardamom powder. And butter. And cook for another 2-3 minutes, stirring continuously. Till all the mixture comes together and it will get very light brown. This has been 4 minutes, after I have added the butter. And as you see the mixture has come all together. And it has changed the color very lightly. You can smell the sweet taste of cardamom. And this is ready to be transferred in a plate which I have greased earlier. Press this very firmly. And wet the spatula, it helps not sticking to the spatula. So do it about inch height. As you see adding some pistachio it has given very beautiful color and look. We have to at least an hour or more before we can slice the milk cake. So it has to really come to the room temperature. Milk cake is looking great, very delicious. It’s a very simple recipe to make.
