Today I will be making rava laddu.
(suji ka laddu) Rava laddu is traditional Maharashtrian sweet. This is a popular laddu prepared almost in every household for all the festivals. Rava laddu is simple and easy recipe but simply delicious. Rava laddu is made with roasted rava, coconut, ghee, sugar and nuts. This recipe will make 14 laddus and will serve 6. To make rava laddu we will need: 1 cup rava coarse, suji or semolina. 1/3 cup coconut powder 1/4 cup clarified butter or ghee 2 tablespoons of cashew crushed 1 tablespoon raisins 1/4 teaspoon cardamom, crushed. 3/4 cup sugar And approximately 1/4 cup hot milk First I will roast the cashews over low medium heat. 1 tablespoon clarified butter And cashews Roast them stirring continuously so they catch the same color all around. And should take about 2 minutes when they will be light golden brown. This is ready its golden brown. It has been about 2 minutes. Now I will add the raisins. and just stir for about half a minute till they get plump. And as you see raisins are ready and just transfer it into a bowl. I will use the same pan for roasting the rava. So add the remaining clarified butter. And rava. And again we need to roast this over low medium heat. And stir fry continuously. That way rava will get roasted evenly. And this should take about 6-7 minutes. And it should be very very light gold color. It has been about 4 minutes. So this is coming along really good. But it has to catch little bit more color. And it will become aromatic. This has been about 7 minutes. and rava is nicely roasted. As you see it has not really taken the color you don’t want to make it brown. It should be just very very light color but you can smell the rava. Roasted rava smells really good. And now add the coconut. Roast again for about 2 minutes. This has been about 2 minutes and it’s time to add the nuts. Cardamom And sugar Mix it well. As you see the mix is very dry. And it will be hard to make the laddus. Add some milk slowly. Milk should be very hot. Just add as needed. Turn off the heat. Mixture should be little bit more moist than you need to make laddus because by that time it will cool off, it will dry. So little bit more milk. Mix is looking very good and it’s little moist. So wait for few minutes till it cools of little bit so you can handle this and make laddus. So I have used 1/4 cup of milk and this is
looking nice and moist. And I am going to transfer this to a plate and wait till it cools off little bit. So we can handle the mixture to make the laddus. It has been about 5 minutes. Mixture is still warm. It should be more than warm otherwise you won’t be able to make laddus and they will dry up. So now take about 1.5 tablespoons and start making the laddus. Just press it both hands. So they are firm and round. Let’s make the next one. If mix becomes very dry add little bit more milk. So you can make the laddus easily. As it will cool off or it will sit for about an hour. They will absorb all the milk. Rava laddus are looking fantastic! They just melt in your mouth. This is my Marathi friend’s recipe. Made this today! Turned out gr8!! Very easy to make. reduced sugar a lil, and rolled the laddoos in coconut powder .
