Today I will be making seviyan kheer. Seviyan is also known as vermicelli. Seviyans are thin long strings that looks
very much like spaghetti. Seviyan is delicious and easy recipe to make. Basic seviyan is made with milk, seviyan and sugar and then flavored with cardamom and garnished with sliced almonds and pistachios and you have a delicious dessert. This recipe will serve 6. To make seviyan kheer the ingredients we will need: 7 cups of milk 1/2 cup seviyan roasted and broken vermicelli. Available in Indian grocery stores. 1/2 cup of sugar 1/8 teaspoon of cardamom powder (elachi) Pinch of nutmeg (jaiphal) 10-12 string of saffron (kesar) 1 tablespoon of sliced almonds 1 tablespoon of sliced pistachios for garnishing. First I will dry roast the seviyan over low medium heat. Dry roast them for about 2 minutes. And keep stirring continuously. So they are roasted all around evenly. It has been about 2 minutes and you can smell the dry roasted of seviyan. So I am ready to put the milk. Increase the heat to medium high till it comes to boil. Milk has started boiling so I will reduce the heat to medium. And let it cook for about 30 minutes. Do stir occasionally and keep scraping the sides. So milk will become almost half the volume and it will become creamy. This has been about 40 minutes.
Seviyan kheer is looking good. Right thickness. So time to add the sugar. Saffron Nutmeg Cardamom powder And almond. I am saving the pistachio to garnish. Mix it well. And let it cook for another about 5 minutes. It has been about 5 minutes. And seviyans are ready and they are looking very good. They are ready to serve. You can serve them hot or cold either way they tastes great. But just before serving garnish them with pistachios. Seviyan kheer is absolutely delicious dessert.
