You can call me crazy but I’m in love with
my cheesecake. This gorgeous tasting cake is just perfect. You’ll see if you try it
out for yourself. You cannot go wrong with it if you follow my steps. I’m not gonna
lie telling you it’s fast and easy to do but you’ll see the results and you will
conclude that the work is well worth it. If you don’t have time now save this for
later. Ingredient list:
For the crust: 450 g graham crackers (or oatmeal biscuits)
– the best ones to use have a caramel flavor and a touch of cinnamon.
150 g unsalted butter 100 g white and brown sugar mixed (you can
use just white sugar as well) (add some cinnamon if your biscuits don’t
have it already) For the FILLING:
750 g unsalted cottage cheese, cream cheese or mascarpone. I usually use equal quantities
of each cheese mentioned here. 400 g of white sugar
3 tbsp of fresh squeezed lemon juice ½ vanilla bean (by the way I use the vanilla
seeds for almost any dessert I make) a pinch of salt
3 tbsp flour 5 eggs
1 tbsp condensed milk (this is not mandatory, it’s fine if you don’t have it)
For the topping: 150 ml sour cream
3 tbsp white sugar few vanilla seeds
And for the final layer: 1 kg strawberries or mixed berries
400 g of gem (you wanna use a sour gem like berries or sour cherry because the cake itself
is pretty sweet). You can also use jelly. Step 1: Preparing the crust.
Preheat the oven at 160°C. Crumble the graham crackers. This is the lazy
way to do it. I used to do it manually using this kitchen thing, but it’s less work with
the blender. Put the cracker crumbs in a bowl together
with the melted butter and the sugar. Mix with a spatula until the 3 ingredients become
1. Use whatever you have, I used this cake baking
tin which I love, because it’s very easy to work with the cake in the end.
Shape the crust with your hands going up like so.
And in the oven it goes for 8 minutes. Then get it out from the oven and let it cool down.
Step 2: Preparing the cheesy filling. Using the same bowl, mix the cheese with the
sugar, the lemon juice, the vanilla beans and the salt. Add the flour little by little
and continue mixing. Add each egg, one at a time and mix some more. I ended up using
just 4 eggs, they are from the country side and seemed very rich.
Pour the filling over the crust and level it. Up in the oven for 45 minutes, or until
you see that the filling is not very shaky. After it’s done, get it out of the oven
and let it cool down. Step 3: Preparing the next layer
This is easy peasy. Just mix the sour cream and the 3 tbsp of sugar and add a few vanilla
seeds. Add this over the filling and use the oven again for just 5 minutes.
OK, now, get it out of the oven, let it chill and then put it in the fridge for a few hours.
Step 4: Preparing the final layer Pour the jelly or gem or whatever you have
(I used homemade sour cherries and berries gem that I made last year). First pour the
gem and then decorate with the fruits as you want. I used fresh strawberries and some frozen
mixed berries which I defrosted first. Step 5: Finally Enjoy!
If you wanna impress your family and friends this is the perfect choice! Hope you will
try this recipe, the result is honestly the best cheesecake i’ve ever tasted!
